How to Roast a Red Pepper in the Oven

Roasted Red Peppers are often sold in fancy jars along with fun ingredients like kalamata olives and cocktail onions.  They’re absolutely delicious and essential for several ethnic recipes.  But the first time I bought a jar for $3.50, then found out there was maybe one and a half peppers in it, I felt like I’d just wasted about two dollars.  Roasting red peppers yourself is easy and economical, plus it’s kind of fun!  I got six red peppers for under $5 at Costco, so this comes out quite a bit cheaper than the jarred variety.  Check out the infographic below to start roasting red peppers yourself.

    Is the “cover dish & let sit for 10 min” outside the oven? Or still inside?

      Ah good question! I couldn’t figure out how to fit that on the infographic. It’s outside. I usually use just a towel over the dish. But I have covered it in the oven as well with a lid and it worked just fine.

    I get mine from the produce bargain counter at the grocery store, usually four for 89 cents, or at the farmers market. I cut them in sections, seed them, and then lay them flat on a pan that is dedicated to roasting peppers, then broil until the skin is black, usually three or four minutes.

    Take them out of the oven, put them in a bowl, cover the bowl with a plate for 15 minutes, then peel once they’re cool.

    I have a huge stash in the freezer now.

    The only problem is that my smoke alarm thinks roasting peppers = danger!
