Parmesan Crusted Chicken Recipe

I technically only work four days a week. You might think that would mean that I have lots of free time to relax, spend time with friends and follow my favorite tv shows, but this is not the case. Between cooking classes, blogging, festival demos, pets, exchange students and taking care of a house and yard, relaxing is all too rare. The funny thing about being a food blogger is that after spending hours each week on recipe testing and food photography, I sometimes don’t feel like putting much work in for dinner time. That’s when recipes like this come in so handy. Check out the video below and you’ll see what I mean.

It’s unfortunately true that my days off are rarely restful, although I must point out that my husband typically does most of the laundry and dishes (for which I’m forever grateful!). The days that I work for the City of Auburn are often even more crazy, so it’s important to me to have a few mindless recipes that require minimal work for those days that I need to make sure cooking dinner doesn’t overwhelm me.

This Parmesan chicken recipe is one that I’ve been making for years. I’m not sure if I first got it from a jar of Hellmann’s or if someone taught it to me, but it’s definitely a go to recipe in our family. Sometimes, like in the video and photos, I’ll serve it on top of a bed of lettuce with our favorite Caesar dressing. Other times I’ll serve it as is with a side of steamed vegetables like broccoli, asparagus or green beans and some whole wheat bread. I also use only half a breast per person which greatly reduces the calories and fat per serving.

No matter how I dish it up (or how Eric dishes it up), everyone always ends up satisfied and we always marvel at how moist and juicy the chicken breast ends up. Plus it takes less than five minutes of prep time! We love the recipe and, when I don’t have time to make homemade mayonnaise, Hellmann’s has always been our brand of choice. Parmesan Chicken Recipe

Prep time: 5 minutes
Cook time: 20 minutes
Total time: 25 minutes
Yield: 4 chicken breasts
Calories per serving: 370, Fat per serving: 23g, Sodium 390g, Total Carbohydrates 2g, Sugars 1g, Dietary Fiber 0g, Protein35g

Ingredients

  • 1/2 cup
    Hellmann’s® or Best Foods® Real Mayonnaise (or Light Mayonnaise)
  • 1/4 cup
    grated Parmesan cheese
  • 4
    boneless, skinless chicken breast halves (about 1-1/4 lbs.)
  • 4 tsp
    Italian seasoned dry bread crumbs

Cooking Directions

  1. Preheat oven to 425°.
  2. Combine Hellmann’s® or Best Foods® Real Mayonnaise with cheese in medium bowl.
  3. Arrange chicken on baking sheet and evenly top with mayonnaise mixture, then sprinkle with bread crumbs.
  4. Bake 20 minutes or until chicken is thoroughly cooked (internal temperature of 165 degrees).

Approximate cost/serving: It’s $5-7 for the recipe depending on whether you buy your chicken in bulk and on sale. Let’s say you do, at four servings it’s $1.25 a serving. If you serve half a breast per person like I do with lots of vegetables, then it’s only 63 cents a serving!

Gluten Free: You can make this gluten free by using a gluten free bread crumb like ground rice chex or gluten free waffles.

    I like to cook full meals in my rice cooker: chicken pilau (with carrots and raisins), or rice with salmon and peas and lemon. So easy and fast.

      No it really doesn’t! The mayo just helps keep the chicken really moist and juicy which is typically difficult with chicken breasts.

    LOVE your video! Very FUN!
    Dinner when short on time would be a salad with lots of veggies and chicken or we always have Cheese, Lettuce, Salsa to create some kind of taco (Fish, chicken, turkey) salad or with corn or flour torts.

    I really cheat when we need a fast dinner. I make sure that when I do spend ages on dinner I make bigger batches than I need and then freeze it in single portions. It’s our equivalent of a ready meal I suppose, since we don’t buy those. Bleurgh. :)

    This looks really good, but I can’t turn on my oven from April to October without needing to sell my child and my husband to pay the light bill, so I’ll probably end up frying it.

    Hey–do you want my calabazas con pollo recipe? It’s a cheap, one-skillet meal that goes a long way, and is very healthy. It’s my favorite meal to make in all the world, and my husband and I never get tired of it, having it at least once or twice a month.
