Easy Kale Recipe with Fried Tofu

The one vegetable we always have enough of is kale.  It’s growing like a weed in our garden, a good weed, a weed we love!  I’ve decided to add stir fry to my list of easy kale recipes.   Some of you will be excited to hear that this recipe is not only a vegan kale recipe, but also easily gluten free!  Even more exciting, the newest member of our family who loves kale as much as we do.  Read on to meet our new bunny, Chloe.

I’ve wanted a bunny since I was a little girl.  In my early elementary school years we lived in North Carolina, right at the edge of the woods.  I used to sneak off in the woods all the time and sit silently on a log until woodland creatures began to come investigate me.  I’d soon be surrounded by the bravest of the deer, rabbits, squirrels and birds.  I felt like Snow White!

But I never got to pet or hold any of these cuddly creatures (which I now realize is a good thing, even somewhat tame wild animals are not for cuddling).  I’ve always wanted a bunny rabbit I could cuddle.  Since getting our own home I’ve been on the lookout for a bunny for us.

I often saw rabbits for sale pretty affordably on Craigslist, it was the start up costs (and potty training) that always prevented me from getting one.  I was watching for a free cage and food, hay, etc, when I saw an ad for someone giving away their bunny because they discovered their daughter was allergic.

It was obvious they really cared about the rabbit and were sending her off with food, hay, litter, toys, a hutch and even a book on rabbits!  I emailed back and forth with the mom and soon Eric and I headed on the hour drive to go get our new bunny.

We named her Chloe, and after a day of adjusting to her new surroundings, she was just as cuddly and entertaining as I’d always imagined.  Once a day she gets her run in by sprinting laps around our living room.  It’s SO hilarious!  She also gets spooked easily, and by that I mean she spooks herself, and will suddenly jump straight up in the air with a little shiver.

When we hold her and pet her between the eyes, she purrs like a cat.  We’ve had so much fun with Chloe, and I’m excited to use her poo as garden fertilizer.  All in all, she’s a great addition to our family, even Cappucino is starting to agree.

While Chloe likes her kale raw, we prefer to cook ours.  My kale chip recipe is our favorite way to eat kale, but this tasty recipe for a kale tofu stir fry is much more suitable for dinner.

Garlic sauteed kale is a common side dish, I turn it into a main dish with the addition of tofu and broccoli in a savory Asian sauce.

So, any advice for new bunny owners?

Broccoli, Kale and Tofu Stir Fry Recipe

 

Prep time: 15 minutes
Cook time: 35 mintues
Total time: 50 minutes
Yield: 4 servings

Ingredients

  • 1/2 cup
    rice vinegar
  • 1/2 cup
    soy sauce
  • 2 TBS
    honey
  • 1/2 tsp
    sriracha chili sauce
  • 1/2 tsp
    garlic powder
  • 1 tsp
    ginger powder
  • 1 TBS
    hoisin sauce
  • 1 block
    super firm tofu
  • 3 TBS
    canola oil, divided
  • 6 cloves
    minced garlic
  • 3 cups
    finely torn kale leaves
  • 2 cups
    bite sized broccoli pieces

Cooking Directions

  1. Heat oven to 375 degrees.
  2. Whisk together first seven ingredients (rice vinegar through hoisin sauce) in a large shallow bowl.
  3. Cut tofu into bite sized pieces and marinate in the sauce for 20 minutes.
  4. Use a paper towel to brush a little of the canola oil on a baking sheet. Spread tofu pieces (reserving marinade) onto the sheet and bake 30 minutes, flipping halfway through.
  5. Once tofu is finished baking, heat remaining canola oil in a non stick pan on high.
  6. Add garlic, kale and broccoli to pan and stir to coat in the oil. Fry vegetables for about 3 minutes until just softened.
  7. Add tofu to the pan and pour reserved marinade over everything. Stir to mix evenly.
  8. Serve over rice or noodles.

 

 

 

 

Approximate cost/serving: The kale is free in my garden, but one bunch is usually around $1.50 at our grocery store.  The tofu was on sale for $1.50.  The whole recipe came out to about $4.20 for four of us so $1.05/serving unless you grow your own kale then it’s just 68 cents/serving!

Vegetarian/Gluten Free:  This is vegetarian and vegan.  It’s easily gluten free as well, just make sure to use gluten free hoisin and soy sauce or tamari.  Also, I’ve heard that some people with gluten sensitivity have had issues with certain tofu brands so read your ingredient labels!

    my bunnies are the reason that i started gardening! i grow lots of healthy things for them (and me, but i have to ask first… :)

    also, the jump/shiver combination sounds like a binky (a happy bunny jump – excellent to see!!) rather than fear-based reaction to something.

      We love kale here. You should grow some Heather, it made me feel like an amazing gardener because it grows so well, and it’s perennial!

    For starters… How A-Dorable is Chloe! It makes me want a bunny myself! And how cute is that picture of Chloe and Cappucino?? Totally puts a smile on my face! What kind of bunny is she?
