Leftover Steak Tacos Recipe

I hesitate to even call this a steak taco recipe because it’s SO simple.  But readers are always asking me for tips on using up leftovers, and this is one of my favorite ways.  We don’t usually have leftover steak since Eric and I typically split a steak between to make it more affordable.  But when I go to my dad’s for a barbecue we almost always get sent home with a bag of steak to play with.  I love using the leftovers in tacos because the result is so fresh that no one would guess your meat is a few days old.This is a cheap recipe to make.  I keep a big package of corn tortillas in the freezer, when I’m ready to make tacos I just chip a few off with a table knife and let them thaw.  The bag of 75 tortillas is only a couple dollars at the local Latino market so it’s MUCH more affordable than buying crispy taco shells at the grocery store.  You can also look for good deals on tortillas at your local bulk store.

It’s okay to heat your leftover steak in the microwave, but I like to heat mine in the skillet instead.  I use the same skillet with the oil and flavor from the steak to soften my tortillas.

Leftover Steak Tacos

makes 6 tacos

Ingredients

1-2 cooked steaks of your choice finely chopped
6 small corn tortillas
1/4 cup crumbled queso fresco
1/2 cup pico de gallo
1 avocado thinly sliced
guacamole and sour cream (optional)

Method

Heat chopped steak in a skillet on medium high heat until sizzling.  Remove steak to a plate and cover with foil to keep warm.  Heat tortillas individually in the skillet until nice and pliable.

Fold each tortilla in half and evenly divide steak, queso fresco and pico de gallo among the tortillas.  Top each taco with 1-2 slices of avocado and serve with sour cream and guacamole if desired.

Approximate cost/serving: This really depends on how expensive your steak was.  Let’s say it’s a small flank steak (typically what we eat) and you serve 3 tacos a person (you can cut it down to 2 a person with a side of chips and salsa).  Then these tacos cost only about $2 a serving.  You can make this even cheaper using leftover chicken!

Vegetarian/Gluten Free: If you like beans they’re a fantastic substitute for meat in tacos to make this vegetarian.  Make sure your tortillas are just corn and you’re good to go for gluten free.
