I was asked to try making a Safeway holiday recipe of my choice this weekend. I decided to try out three of their recipes! I love our local Safeway, and not just because my husband used to work there (Yesterday was his last day! Woo-hoo!) Although I’m getting reimbursed for my ingredients for these three posts, I am only doing this because I shop at Safeway and Eric and I both enjoyed these dishes. The first thing I made was the Marinated Shrimp with Lemon Dill Sauce. Part of why I picked it was that the photo on the site didn’t look that appetizing and I felt a challenge to do better! I discovered the key is to not have so much sauce on the shrimp for the photo, and that toothpicks are really tough to make look attractive. Anyway, we ended up liking it better with less sauce anyway (and it’s better for you!) so next time I make these (and there WILL be a next time) I’ll halve the sauce or use more shrimp.
I love the meat and seafood department at Safeway. Although we usually get beef and chicken locally now, Safeway is our best bet for seafood unless we drive an hour away to Seattle. I even asked Casson Trenor, sustainable seafood guru, and he said that out of the grocery stores in our area Safeway is the most sustainable. I’ve talked with the very nice seafood lady several times about the best fish for what I’m making, and what is or isn’t sustainable. I’ve found she’s very knowledgeable and I just don’t get fish at any other store.
This appetizer is really delicious. I have been eating way too much of it as it’s got both sour cream and mayonnaise, but I did use light mayo! I am really happy with both Lucerne dairy (which is pretty much all we use) and Safeway Select brands. Their store brand is almost always cheaper, often on sale, and really measures up to name brand for me.
You can serve this on a platter with toothpicks already in it, in a big bowl with a serving spoon and toothpicks or forks on the side, or I discovered that 5 of the shrimp mixed with a handful of baby spinach makes a delicious salad! Great use for any leftovers after your party, but I doubt you’ll have any left. I think even just the sauce the shrimp are marinated in is a great condiment that I’ll be using on sandwiches in the future. Let me know if you give this a try.
Lemon Dill Marinated Shrimpserves 20-30 as appetizer
1 1/2 cups Safeway SELECT® Mayonnaise
1/2 cup Lucerne® Sour Cream
1/3 cup fresh lemon juice
1/4 cup sugar
1 large red onion, peeled and thinly sliced
1/3 cup fresh or 2 tbsp. dried dill
1/4 tsp. salt
2 lbs. cooked extra-large shrimp (26 to 30 per lb.)
In a large bowl, stir together mayonnaise, sour cream, lemon juice, sugar, onion, dill, and salt. Stir in shrimp.
Cover and refrigerate overnight, stirring once. Serve with frilly toothpicks.
Approximate cost/serving: We got the shrimp for $8.99/lb, which made the cost of the appetizer about $18.60. That seems steep but if you have these on a platter with toothpicks in them, people will most likely only take 2-3. With 60 shrimp it will come out to around 60 cents a serving. This is also a really easy recipe to cut by half or two thirds for a smaller party.
