Simple yet healthy snack

Do you ever have those nights where it seems like your body doesn’t know it’s dinner time, or maybe you’ve done too much snacking and don’t want a full sized dinner? That was us earlier this week. So instead of dinner, I made this healthy snack.

It was so simple and so delicious! Simply cut some fresh mozzarella into large coins. Top with a leaf of fresh basil, then a slice of tomato. Sprinkle lightly with salt and pepper, then drizzle lightly with olive oil and vinegar.

This completely hit the spot and didn’t leave us with that heavy stuffed feeling like a meal would have. (I’ve discovered these are really good at midnight too!)

  1. This menu are great before diner. We found often by 5 stars hotels make it canape for there guest with smaller fresh mozzarella and smaller tomato. But your canape look more interesting and big enough can replace big plate of heavy stuffed for sure.
    Nice pic.
    Tan;)

  2. When I’m feeling fancy(ish), I’ll make this as a pre-dinner appetizer for The Beard. I like the tomatoes, but not the cheese, so I make myself a tomato salad on the side. He loves it!
