A Favorite Ingredient: Cabernet Vinegar

Oh my goodness, I’m ridiculously busy!  I missed posting on Friday, I can’t believe it!  I’ve been canning and pickling like crazy, picking pounds and pounds of berries, and meeting with lots of young women going through tough times.  I still wanted to do a quick post today before Eric and I start our “us” day, so thought I’d share one of our favorite ingredients with you.

We bought about 6 bottles of this cabernet vinegar when it was being discontinued at Safeway ($2 a bottle!).  It is a great combination of sweet and tangy, and it’s the best thing to put over steamed broccoli.  It also makes great salad dressing.  Just mix with a little olive oil, dijon, salt and pepper.  Goes great with summer tomatoes and avocado.  You can buy it online and I highly recommend it!

Cabernet Vinaigrette

serves 4

Ingredients

3 TBS cabernet vinegar
1 TBS olive oil
1 tsp dijon mustard
pinch sea salt
dash pepper
1/4 tsp sugar

Instructions

Whisk well and pour over salad.

  1. That’s the good news/bad news side of something you love being discontinued. You can get it at bargain basement prices, but once you’re done, you’re done! The vinaigrette looks great…I only wish our garden was still producing lettuce. Seems like that’s the only thing that has grown well this summer.
