It works out great because the kids can just fill the bottom two bowls with cauliflower and mushrooms, rather than trying to pile them in a circle pattern.

You can really use whatever vegetables you want for the platter around your snowman. I went with sugar snap peas, carrots, and cherry tomatoes because it required NO chopping or slicing.

Just make sure to put down a couple of celery stick arms before you do your carrots or cherry tomatoes so that you can fill them in around the arms.

The final step is to add a face and buttons. If you have young kids like mine, you may need to do this step for them. Corban was SO excited when I put the olive slice eyes on and shouted, “Mama, we should use a carrot for his nose!”

From EatingRichly.comIf you’re bringing your Christmas veggie tray snowman to a party, just slice the olives and carrot and put the on the side to transport. You can assemble the face and buttons once you get there.

You could even wait to assemble the whole snowman veggie tray until you’re at the party. The only thing to slice is the mushrooms, olives, and carrot nose. So slice those in advance and it should take just five minutes or so to assemble the snowman when you arrive.
