In fact, they’re so easy, that my two and half year old Corban is here to teach you how to make them for this week’s Mini Chef Mondays.

Hi I’m Corban, and today I’m going to show you how to make Palmiers. Palmiers is kind of a funny word so I call them “fancy French pastries”. I brought my jet along because I am a fighter pilot as well as a French pastry chef.

Start by thawing some puff pastry dough according to the package instructions. If it’s a little uneven you might need a rolling pin to smooth it out. Rolling pins also make great swords.

Even if it doesn’t need it, you should still let your mini chef roll it out a little bit, because it’s really fun.

Next it’s time to make your flavored sugar. You can use cinnamon, or your favorite mix of spices. We’re using my mama’s homemade pumpkin pie spice.

Now your mini chef can sprinkle it all over the puff pastry dough. It’s okay if they don’t sprinkle it evenly. Just show them the empty spots to cover.

Now you roll one side up until it gets to the center of the pastry. A grown up might need to help with the rolling.

Then you roll the other side up to the center.

Now gently pat some more of the flavored sugar on top of the rolls.

Mama gently cut the pastry rolls with a BIG knife. I watched from a safe distance. She put them on a parchment lined cookie sheet and put them in the oven.

Halfway through cooking, she took them out and flipped them over so that both sides of the fancy French pastries will be flat.

You’ll know they’re done when they are golden and flaky. Let them cool on a wire rack, and then you can have a fancy tea party!

Pumpkin Pie Spiced Palmiers French Pastries Recipe

Palmiers are light and flaky French pastries that are shockingly easy to make. Serve them at a tea party, or as a unique addition to a holiday cookie platter. Feel free to sub the pumpkin pie spice with your favorite mix of baking spices. As most boxes of puff pastry come with two sheets, feel free to double the recipe, or put the other sheet in a zip top bag in the freezer to use another day. Adapted from Food.com

Cook Time 14 minutes
Total Time 34 minutes

Ingredients

  • 1 puff pastry sheet
  • 3/4 cup granulated sugar
  • 2 teaspoons pumpkin pie spice, try our homemade pumpkin pie spice recipe

Instructions

  1. Preheat oven to 400 degrees F.
  2. Thaw the puff pastry sheet according to the package instructions. I put mine on a cutting board.
  3. Make sure it's an even thickness, using a rolling pin if you need to. You can also wet your finger slightly and press together any tears in the pastry dough.
  4. Mix the sugar and pumpkin pie spice together.
  5. Sprinkle the flavored sugar all over the pastry dough.
  6. Roll one side of the pastry dough to the halfway mark, and repeat with the other side.
  7. Use a sharp knife to cut the cookies about 1/2 an inch thick, then place them on a parchment lined cookie sheet.
  8. Sprinkle with any additional flavored sugar that is left behind on the cutting board.
  9. Bake for 6-8 minutes, until slightly puffy, and remove from the oven.
  10. Carefully flip all the cookies over and return to the oven for 4-6 minutes, until the center is cooked through and the edges are golden.
  11. Remove to a wire rack to cool.

Notes

Approximate cost/serving: I find that puff pastry sometimes goes on sale around the holidays, so I try to buy it then. You can also find coupons for it sometimes. I got mine for $3.50 a box, and made my own pumpkin pie spice from bulk spices, so this came out to just about $1.40 for us for the whole batch. So cheap!

Vegetarian: If you use Pepperidge Farm Puff Pastry, they are not only vegetarian, but vegan.
