Ingredients

  • 1 medium pumpkin
  • 1 onion, chopped
  • 2 tablespoons vegetable oil
  • 2 lbs ground beef
  • 2 tablespoons soy sauce
  • 2 tablespoons brown sugar
  • 4 ounces can sliced mushrooms (one can)
  • 15 ounces can/box cream of chicken soup
  • 1.5 cups cooked rice
  • 8 ounce (one can) sliced water chestnuts

Instructions

  1. Cut off the top of the pumpkin and thoroughly clean out pulp and seeds.
  2. Preheat oven to 350°F (175°C).
  3. In a large skillet sauté onions in vegetable oil until tender, then add the meat and cook until brown.
  4. Drain drippings from skillet, add soy sauce, mushrooms,brown sugar and soup.
  5. Simmer 10 minutes, stirring occasionally, then add cooked rice and water chestnuts.
  6. Spoon mixture into cleaned pumpkin shell.
  7. Replace pumpkin top and place entire pumpkin, with filling, on a baking sheet.
  8. Bake 1 hour, or until inside meat of the pumpkin is tender.
  9. Put pumpkin on a plate, remove pumpkin lid and scoop out meat and rice, then scrape the inside of the pumpkin to serve pumpkin meat on top of the beef and rice.
