BACK TO SCHOOL (AND STARTING PRESCHOOL!)

For many of you, this is back to school season. For our family, it’s the very beginning of school. Corban is starting preschool!

The kids already go to a wonderful in-home daycare two days a week, so we are well familiar with the busyness of trying to get out the door in the morning. Their daycare also drives the kids enrolled to the preschool down the street, so it works out well that school won’t be adding additional days and driving time for our family schedule.

I just can’t believe my little guy is old enough for preschool. Earlier this week he had all sorts of firsts like riding a pony, holding a parrot, and going on a big spinny ride at Augustfest in our favorite park in Auburn.

Our family loves eggs and omelettes. But I’ve always thought of omelettes as a sit down, enjoy a long breakfast, you have to take your time food.

Then I discovered the concept of an omelette in a jar. What?!!! Omelette to go? That you can make in the microwave?! In like two minutes???!!!! I feel like I need a million emojis to demonstrate just how excited I was. But also one big giant DUH!

I have been microwaving eggs in a mug for years, so why did I never think to try doing a microwave omelette?

The biggest difference between microwaving just an egg in a mug, and doing a microwave omelette in a jar (or mug), is cooking time. Adding the extra ingredients means a 2-3 minute cooking time instead of one.

But I recommend cooking in 30 second increments. Depending on the amount of ingredients in your omelette to go, 3 minutes might be too long and cause the eggs to explode out the jar and all over your microwave. Quite entertaining for the kids, but not for the person who has to clean the microwave!

My favorite thing about doing a microwave omelette to go, is that it’s something the kids can make themselves. Corban has done a lot of cooking by age 3, but he’s just not ready to stand at a hot stove and flip an omelette. Because he’s 3!

He can however whisk eggs, dump some ingredients into a jar, and push the buttons on the microwave!

Just make sure to be careful removing the jars from the microwave as they can be pretty hot. If you’re actually taking the omelette to go, you can get mason jar koozies in the half pint size to help keep it warm. They’re also super cute!

Just slip it on, put the lid on, and jump in the car. Perfect omelette to go!

This microwave omelette to go is the perfect quick and easy hot breakfast in a jar. The recipe is divided between two jars because it is faster to microwave it in two smaller jars than one big one. Nutrition info is for one half pint jar, you can decide how hungry you are if you want two or want to share! Feel free to skip the cheese if you want this dairy free.

Prep Time 3 minutes
Cook Time 3 minutes
Total Time 6 minutes

Ingredients

  • spray oil
  • 3 large eggs
  • dash of salt and pepper
  • 1 teaspoon dried parsley
  • 2 slices deli ham, chopped
  • 1.5 ounces grated cheese SKip the cheese for dairy free., We use two Tillamoos and just break them into little pieces
  • 8 grape tomatoes, halved

Instructions

  1. Lightly spray the inside of two half-pint mason jars with oil.
  2. In a glass or bowl, whisk up the eggs and stir in salt, pepper, and parsley.
  3. Divide ham, cheese, and tomatoes among the two jars and give a little shake to mix them up in the jars.
  4. Pour the seasoned eggs over the ingredients in each jar. Don't worry if one jar has a little more eggs than the other, you'll just remove it from the microwave earlier.
  5. Microwave on high in 30 second increments for 2-3 minutes. After each 30 seconds, check the jars to see if the eggs have risen and cooked through.
  6. Your microwave omelette to go is done when the eggs are solid and fluffy looking. Any liquid in the bottom of the jar should be completely clear (just juices released from the ham or tomatoes) not white or yellow (which is raw eggs).
