Summer is here! We’ve been going back and forth between sunny days and crazy stormy ones. But on the sunny ones, I’ve been dying to make my own mojitos with the plethora of mint in my backyard. Eric and I don’t drink alcohol very often, so when we do we want something special. These mojitos made with strawberries and mint I grew myself definitely qualify, and I’ve got an alcohol free version too!
Last week I finally decided it was time to make mojitos, and then realized that I didn’t have any limes! I had plenty of lemon though and juiced a couple to experiment with. It just wasn’t right. That’s when I thought of my strawberry lemonade recipe and decided to use it as my mojito base.
Oh man was it a success!!!
Because we’re not big drinkers, we don’t have shakers, muddlers, or any of those special drink making tools. I smash my mint with the handle of a wooden spoon! We really like this served over ice, but if you prefer, you can mix it with ice and then strain it into glasses, garnishing each drink with mint.
I happen to like the chunks of strawberry and smashed mint in my drink!

I’m had some with our July 4th barbecue dinner, that is after a day of emceeing and running the cultural entertainment at the City of Auburn’s 4th of July Festival. Yes, busy times. I’ll share some photos with you on Friday.
I’m so excited I got to be a part of the July 4th celebrations in my city because I’ve always loved the 4th of July. I would never claim that the US is the BEST country in the world, like every country, there’s a lot we still need to change. But I definitely recognize the privileges that we are given as rights in America, and the sacrifices required to ensure those rights. As a military dependent I’ve seen American spirit stand strong in the midst of lots of adversity.
No matter what, I’m thankful EVERY day to have been born an American and for the men and women (including my father) who have made the liberties I have possible.
- 6 strawberries
- 1 lemon, juiced
- 10 mint leaves, plus additonal for garnish
- 1/4 cup sugar
- 1/2 cup water
- 2 ounces rum
- Divide strawberries between two glasses and add half the lemon juice and 5 mint leaves to each glass. Use the handle of a wooden spoon to smash the berries and mint with the lemon juice.
- Mix the sugar and water in a small pot and heat on medium while stirring until the sugar has dissolved. Pour half of the sugar syrup into each glass.
- Add an ounce of rum to each glass and mix.
- Fill both glasses with ice and garnish with mint.
