Sweet Potato Strawberry Juice Recipe

Did you know you can juice sweet potatoes? I would not even have considered it, until I stumbled across a recipe the other day. I was surfing recipes on Pinterest, because I had a huge amount of sweet potatoes to use up. There were all sorts of roasted sweet potato dishes, but it was the juicing recipe that practically jumped off the screen for me. I immediately sprang up from the computer and ran to the kitchen, certain I had just discovered a closely guarded secret of the juicing club.

I had some strawberries left over from making my strawberry ladybugs, and decided their tartness, and my lone green apple would pair well with the sweetness of the potato.

Eagerly anticipating my jar of juice, with a small amount of nervousness in case I ended up wasting a perfectly good sweet potato, I sliced everything up and began feeding it into the juicer. A beautifully creamy, frothy, bright orange liquid began trickling, and then gushing from the spout. There was a LOT of juice in that potato!

Once everything had been juiced, I gave it a quick stir and took a tentative sip. There was an instant hit of sweetness, that was balanced perfectly by the acidity and brightness of the strawberries and apple. The juice also left a slightly starchy aftertaste that was surprisingly pleasant.

Some of you may be thinking that you can’t afford a juicer and this recipe just doesn’t apply to you, but I would encourage you to look around for used juicers. The more expensive ones are fancier and more convenient, but you can get older models for under $10 that work just fine. My juicer was $4 at Goodwill! It doesn’t have a container to collect the extracted pulp, so I just tie a plastic bag around the chute. I often see juicers on craigslist and freecycle as well.

Ingredients

  • 1 large sweet potato
  • 6 leaves large strawberries, removed
  • 1 small granny smith apple

Instructions

  1. Slice produce as needed to fit in the juicer.
  2. Juice and stir.
  3. Refrigerate any leftovers and drink within 48 hours.

Notes

Approximate cost/serving: The cost depends on the current price of strawberries, but sweet potatoes and granny smith apples are almost always cheap. This ended up costing me just about $1.50 total, so 75 cents a serving.
Vegetarian/Gluten Free: Yes to both, and vegan too.
