These enchiladas are simple, affordable, and oh so satisfying.  Eric was responsible for bringing a main dish to a work potluck, so I started going through our fridge and freezer trying to decide what I could make that wouldn’t require buying any ingredients.  Cooking for a potluck can be tough when you’re on such a tight food budget.  I discovered I had everything I needed to make enchiladas except for tomato sauce (to make the enchilada sauce that gets poured over the top).  Rather than admit defeat, or buy enchilada sauce, I decided that these would be delicious with salsa on top as well.  Guess what, I was right!

Parmesan Crusted Chicken Recipe

One of our favorite salads ever is at Dave and Buster’s, the arcade for adults.  It’s a chicken caesar salad but what makes it spectacular is the crispy parmesan crust on the chicken.  While I won’t claim any similarity to the Dave and Buster’s chicken caesar salad, after a few years of experimenting I’ve come up with a parmesan crusted chicken recipe that leaves us equally satisfied.

Simple Seafood Chowder and I’m off to Mexico!!!

This time of year in Washington, I want hearty warm meals like soup, stew, and chowder.  Some of my stew recipes simmer for hours to reduce and thicken, so I make a huge batch that I can freeze for a quick meal later.  But sometimes I want something right away and don’t have any in the freezer.  That’s when my seafood chowder steps up to the plate.  This is such an easy seafood chowder recipe, and totally satisfies that heartiness craving.
