How to Open a Pomegranate and Pomegranate Chicken Recipe

A great way to get a chicken breast juicy and flavorful is to marinate it, and my new favorite marinade for winter uses pomegranate juice.  I was at the store a couple weeks ago and saw a big 478 oz jug of POM Wonderful on sale for $7!  It’s normally $10 which is still a better deal than $5 for the 16 oz bottle.  I had to buy it and although we did drink it, I’ve made about 6 different recipes with it over the past two weeks.  I also got a box of pomegranates at Sam’s Club for only $4!  As I was checking out the cashier told me she had no idea what a pomegranate was or how to eat one, I know a lot of people feel that way so I’ll also give you a photo tutorial on how to peel and eat a pomegranate.

I’ve had a lot of women ask me “how can I get my husband to eat Asian food?” or say “my son won’t eat Asian food!”.  Well here is the recipe you’ve been looking for.  First of all, don’t tell them it’s Banh Mi, or Asian, just call it a Steak Sandwich…say it with me now…STEAK SANDWICH.  What man or teenage boy wouldn’t flip head over heals for those two words?

Go try it, just say “Honey, would you like a steak sandwich for dinner?”  Love that reaction!

Lemon Dill Shrimp from Safeway Holiday Recipes

I was asked to try making a Safeway holiday recipe of my choice this weekend.  I decided to try out three of their recipes!  I love our local Safeway, and not just because my husband used to work there 😉  (Yesterday was his last day!  Woo-hoo!)  Although I’m getting reimbursed for my ingredients for these three posts, I am only doing this because I shop at Safeway and Eric and I both enjoyed these dishes.  Check out Gingerbread Cookies and Fudge Ring.

The first thing I made was the Marinated Shrimp with Lemon Dill Sauce.  Part of why I picked it was that the photo on the site didn’t look that appetizing and I felt a challenge to do better!  I discovered the key is to not have so much sauce on the shrimp for the photo, and that toothpicks are really tough to make look attractive.  Anyway, we ended up liking it better with less sauce anyway (and it’s better for you!) so next time I make these (and there WILL be a next time) I’ll halve the sauce or use more shrimp.
