Iced Mocha Recipe and My Introduction to Coffee

I used to work at Starbucks, and the funny thing was that I didn’t even really like coffee that much when I got the job there.  But I needed a job and it was only a 5 minute drive from my house.  Everyone seemed friendly there so I thought it would be a great place to work.  My introduction to the world of coffee started like a child entering a frigid wading pool one inch at a time.

Fudge Ring from Safeway Holiday Recipes

fudge piece blog size

I was asked to try making a Safeway holiday recipe of my choice this weekend.  I decided to try out three of their recipes!  I love our local Safeway, and not just because my husband used to work there 😉  (Yesterday was his last day!  Woo-hoo!)  Although I’m getting reimbursed for my ingredients for these three posts, I am only doing this because I shop at Safeway and Eric and I both enjoyed these dishes.  Check out Lemon Dill Marinated Shrimp and Gingerbread Cookies.

The next recipe I made was the fudge ring…that’s right…FUDGE RING!!!!

How could I not make this beautiful bounty of chocolate sweetness?  You’ve got milk chocolate, butterscotch chips, m&ms and Oreos.  Sign me up!

Pumpkin Pie Ice Cream

Pumpkin Pie Ice Cream closeup

I am a big fan of pumpkin pie, it’s on of the few food items I think is great for any meal.  I especially love making it with fresh pumpkin puree because there’s just something so right about knowing I really made it all from scratch.  (Wanna know how to cook a whole pumpkin and make your own puree?)  I thought about sharing a pumpkin pie recipe for the holidays, but really, they’re everywhere.  So I decided to change it up with something everyone loves…ICE CREAM YOU SCREAM WE ALL SCREAM FOR PUMPKIN PIE ICE CREAM!  Whew!  Got that out of my system.  This is a great dessert option for someone who isn’t confident in pie making.

Homemade Cranberry Sauce with Satsuma Zest

Cranberry Sauce Satsuma Zest

I mentioned last year that I’m in charge of cranberry sauce for my family’s Thanksgiving meal.  My dad always wants the cranberry jelly in a can, but my mom, grandmother and I love real cranberry sauce.  Each year I sit back and smile as all the ladies at the table sing out “Pass the cranberry sauce!!!”  Last year was the first time I used satsumas instead of large navel oranges.  I loved the flavor and the fact that it’s using produce that’s in season.

Homemade Applesauce Recipe

Jonagold Apple Sauce Close Up blog size

There’s something so comforting and soul warming about homemade applesauce.  I associate applesauce with being sick, or cold, which isn’t a bad thing.  When I was sick was when I would often get undivided attention and love from my mom, she’d bring me apple sauce and ginger ale and I’d be so relieved to be able to eat something.  When I’d be cold in the morning (and didn’t feel like eating oatmeal) I’d microwave some apple sauce, stir in lots of cinnamon, and savor it’s sweet warmth with every bite.  It’s easy to customize apple sauce to your taste, and this delicious homemade applesauce recipe is so much better for you than what you can buy in the store.  Even better bonus, kids love making their own apple sauce!

Apple Butter Recipe Your Grandma Would Be Proud Of

I wasn’t expecting such a buzz last week when I mentioned on facebook that the crockpot of apple butter was making my house smell amazing.  But suddenly people were commenting, and emailing, and begging for the recipe.  So I promised to post it ASAP, and here it is!  I do have to say this is REALLY good apple butter.  I’ve given it as gifts and had people chase me down in church to ask how I made it.  In fact, if I were that type of person I might boastingly call this the best apple butter recipe ever!  But really, there are two secrets to this apple butter, and I promise to share both of them with you.
