– 20 peeled, deveined and cooked medium sized shrimp – 1 1⁄2 cups shredded Fiesta Blend Cheese – 4 ounces (small can) chopped green chilies, drained – 4 green onions, finely chopped – 1⁄4 cup sliced ripe olives, drained – 1⁄2 cup mayonnaise – 1 tablespoon taco seasoning – 1⁄2 teaspoon lime juice – 48 tortilla chip scoops
1. Preheat oven to 350F. 2. Chop each shrimp into thirds. 3. Stir together shrimp, cheese, green chilies, green onions, and olives. 4. In a small bowl, whisk together mayonnaise, taco seasoning, and lime juice. 5. Stir sauce into shrimp mixture.
6. Place about a tablespoon of filling into each chip scoop and place on baking sheet. 7. Heat about 5 minutes, until cheese is melted, and serve immediately.
