This no bake chocolate cherry almond tart recipe is an easy summer dessert. You can use any variety of cherries you like, but our favorites are Bing cherries.

Ingredients
Crust
  • 5.3 oz (1 package) of shortbread cookies or 1 1/4 cups shortbread cookie crumbs
  • 5 tablespoons of butter melted
Filling
  • 1 cup heavy cream
  • 1/4 cup unsweetened unsalted almond butter
  • 1/4 cup raw honey
  • 1 teaspoon pure vanilla extract
  • pinch of salt
Topping
  • 3 ounces dark chocolate chopped
  • pinch of salt
  • 1/4 cup heavy cream
  • 5-10 cherries pitted and halved
  • 3 tablespoons sliced almonds
Instructions
  1. Use a food processor to turn your cookies into crumbs, then to mix in the melted butter.
  2. Press the buttery crumbs into the bottom of a rectangular tart pan and up the sides.
  3. Refrigerate at least 30 minutes.
  4. While crust is chilling, whip the heavy cream until extremely stiff. You may need to chill the cream and bowl if you're having trouble getting it stiff enough.
  5. In another bowl, mix together the almond butter, honey, vanilla extract, and pinch of salt.
  6. Mix in half of the whipped cream, then fold the rest in with a spatula.
  7. Refrigerate at least 30 minutes.
  8. Place the chopped chocolate in a glass bowl and sprinkle with a pinch of salt.
  9. Microwave the cream in a glass measuring cup for one minute.
  10. Pour the cream over the chocolate and stir until completely melted and smooth.
  11. Spoon the chocolate ganache over the almond filling and use the spoon to spread it out evenly.
  12. Place cherry halves face down on the tart, then sprinkle almonds all around.
  13. Refrigerate at least 30 minutes before serving.
