Ingredients
  • 24 white cupcakes baked and cooled
  • 24 marshmallows
  • food coloring pen dark pink
  • 1 cup salted butter softened
  • 3 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 1 tablespoon heavy cream
  • 24 pink Skittles
  • 48 candy eyes
Instructions
  1. While cupcakes bake and cool, cut a marshmallow in half on the diagonal. Place the two flat ends down, points up.

  2. Use a dark pink food coloring pen to color in the cut sides of the marshmallows. Repeat with all 24 marshmallows.

  3. In the bowl of a stand mixer, beat the softened butter and powdered sugar until completely combined. 

  4. Add vanilla extract and heavy cream, then continue to mix until smooth and creamy.

  5. Use a large open star tip to pipe buttercream frosting in a nice round tower on top of cooled cupcakes.

  6. Place a pink Skittle front and center, with two candy eyes above it, then nestle a pair of ears into the top of the frosting.

  7. Repeat with remaining cupcakes.

  8. Refrigerate until ready to serve.
