Crispy baked potato wedges have a crunchy exterior, but are soft and tender inside. Feel free to add some garlic powder, dried herbs, or parmesan for extra flavor. Nutrition facts are based on 4 wedges per person. Adapted with permission from Food.com

Ingredients
  • 6 medium potatoes , peeled
  • 1/3 cup melted butter
  • 1 tsp salt
  • 1 cup crushed Cornflakes
  • additional seasonings as desired
Instructions
  1. Preheat oven to 400 degrees F. Spray baking sheet with cooking spray.

  2. Cut potatoes into 8 wedges.

  3. Dip wedges into melted butter and sprinkle with salt.

  4. Add additional seasonings (if any) to cereal crumbs.  

  5. Pour cereal into a bag.  Add buttered potato wedges a few at a time; shake to coat.  

  6. Place potato wedges on prepared baking sheet.

  7. Bake 40 minutes; serve while hot.
