Ingredients
  • 4 Foster Farms Boneless Skinless Chicken Breast Fillets
  • 1/4 cup crumbled feta cheese
  • 1/4 cup finely chopped, drained marinated artichoke hearts
  • 2 tablespoons finely chopped, drained roasted red peppers
  • 2 tablespoons thinly sliced green onion
  • 2 teaspoons snipped fresh oregano or 1/2 teaspoon dried oregano
  • 1 teaspoon kosher salt
  • 1/4 teaspoon ground black pepper

  1. Use a sharp knife to cut a pocket in each chicken breast,horizontally through the thickest portion to, but not through, the opposite side.

  4. Secure opening of the chicken breasts with wooden toothpicks.

  5. Sprinkle chicken breasts all over with salt and black pepper.
  6. Preheat a large nonstick skillet or grill pan on medium, and coat with cooking spray.
  7. Add chicken and cook 10-12 minutes on each side, until internal temperature measures at least 165 degrees F.

If you find the chicken is not cooking through in the skillet or grill pan, you can finish it off in a 350 degree F oven. Sometimes thicker chicken breasts have a hard time cooking through on the stove.

CHARCOAL GRILL: Place stuffed chicken breasts on the rack of a charcoal grill directly over medium coals. Grill uncovered for 6-8 minutes on each side, or until chicken temperature is at least 165 degrees F.

GAS GRILL: Preheat grill to medium. Place chicken on the grill rack over the heat. Cover and grill 6-8 minutes on each side, or until it reaches at least 165 degrees F.
