Listen. Can you hear it? It’s the lulling sound of waves gently crashing against the shore.

Can you feel it? Those rays of sun caressing your cheeks as your toes dig into the soft white sugar sand?

Can you taste it? The smooth sweetness of tropical mango and ripe banana, sliding down your throat in one awesomely healthy green smoothie? Well that’s one part of this beach vacation you don’t have to imagine. So dust off that bikini and grab the blender. We’re heading for the tropics baby!

We are such a smoothie family. Our blender is one of the most used appliances in our kitchen, and will probably survive my dreamed of purge when I finally de-clutter our kitchen counters and start storing things out of sight.

I know some people are turned off by the color of green smoothies, but this one is a pretty, inviting, fresh shade of green that begs to be sipped by the pool. While you can use any milk in this, I really prefer it either with vanilla soy milk or, even more tropical, coconut milk.

Because mangoes freeze so well, I’m always on the look out for a sweet deal.  When I find them for 50 cents a piece or less, I buy several. Then I cut them into chunks (see how to cut a mango), pop the chunks into a quart sized bag, and freeze them. This means I get affordable mango year round. It’s like being in Hawaii again! Or at least like my taste buds are there.

  1. Place the spinach and milk into a blender. Blend on high until spinach is completely pureed.
  2. Add banana and mango. Blend on high again until everything is smooth. That’s why it’s called a smoothie!

Approximate cost/serving: I buy organic greens because they are one of the dirty dozen, but they are really affordable at Costco. The mango I got for 45 cents by buying in bulk when there was a sale with Azure Standard. This ended up costing just about 60 cents for the whole batch. So that’s 30 cents for a snack sized smoothie or 60 cents for a meal. You won’t get that kind of deal at any smoothie stand!
