I love buying the fresh mozzarella cheese two pack at Sam’s Club. I can use it for pizza, pasta, sandwiches, or a simple fresh mozzarella salad. Here’s the brand I get, but it’s much cheaper at Sam’s Club.
My boss gave me some free cherry tomatoes she had an abundance of so I decided this was the perfect side dish to make for a fast dinner. I was going out to coffee with someone a little while after work, so decided to pre-marinate the tomatoes before coffee. But you can just make it all at once.
8 oz fresh mozzarella
15 cherry tomatoes
2 TBS balsamic vinegar
1 tsp italian seasoning
1 tsp olive oil
Cut mozzarella into 1/2 inch cubes. Slice tomatoes in half. Mix the tomatoes with the remaining ingredients. Layer in a dish with the mozzarella. Season with salt and pepper.
