Fast and Easy Lunch

Today is a snow day, well it was, now it’s a slush/rain day. But because of the dangerous driving conditions I stayed home from work. Eric on the other hand had to work longer than usual, so when he got off he was starving and wanted something fast. He was going to make himself a sandwich, but that’s his typical lunch so I said I’d make him something different.

I didn’t want to take the time to cook any meat, but had some leftover re-fried beans and decided to make a burrito of sorts. Like every meal, I wanted to make it a little healthier, so used spinach in it. It turned out really good and took less than 5 minutes to make. (no need to actually measure, you can just eyeball it all)


Super Quick Bean Burrito
serves 2

Ingredients

2 small flour tortillas
1/2 cup re-fried beans
1/4 cup salsa
2 TBS chopped green onions
1/4 cup shredded cheddar
1 handful of baby spinach torn up
2 large spoonfuls of sour cream

Instructions

Place each tortilla on a plate. Spread 1/4 cup of beans over the middle of each. Pour the salsa over that and spread it out. Sprinkle each with green onions and cheddar. Microwave for 45 seconds.

Spread spinach over the top and dollop each with a spoonful of sour cream. Fold up one end and the two sides.
