Carrot Zucchini Stir Fry Recipe

The two vegetables we’re getting a lot of in our CSA right now are carrots and zucchini.  That’s just fine with me because I have SO many fun ways to use them.  Tonight I’m going to bake some carrot zucchini bread, and last night we had the fastest stir fry ever.  Seriously!  The rice took 20 minutes, but once it was done I whipped up this stir fry in less than five minutes,  in fact the entire meal was ready in under half an hour.

Deviled Potato Bites

We have been getting a ton of potatoes from our CSA, and as I looked at the pretty little red and blue/purple potatoes, I decided I needed to do something that showed off their colors.  I just cut several of them in half and boiled them, then scooped out the centers.  I wasn’t sure what to fill them with and thought about several different things, then thought, “why not fill them with themselves?”  Kind of like a deviled egg.  I decided to separate the blue and red potato filling and am glad that I did.  When I tried mixing the ingredients in the blue potato mash, it turned an ugly muddy color.  So I used a couple whole red potatoes (no skin) to make enough filling.  These are perfect pupus (appetizers) for a party, a great snack, or side dish.  Once we even had them for a small dinner!  They’re also a great substitute for potato salad at a BBQ.

Fried Zucchini Sticks

Many of you have zucchinis galore right now whether you’re growing them yourselves, getting them through a CSA, or from the nice lady at church who is trying to give zucchini to everyone she sees. I know I had a zucchini week while I was on vacation, but that was only 3 of many many recipes I make with zucchini. So I thought today would be a great recipe for people who aren’t necessarily a fan of zucchini. Yes, deep frying it takes away some of the health benefits, but if you’ve got a bunch of zucchini you can’t get your family to eat, this is your recipe! Even the staunchest non vegetable eater I know loves these crispy coated bites of hot zucchini goodness.
