Peanut butter bunny butt Easter treat recipe EatingRichly.com

These little bunny backsides make cute kids’ snacks, and are super easy to make. I whipped up nine of them in about 15 minutes. I love that they’re more unique than the usual sugar cookies, and have whole grain crackers and unsweetened peanut butter, making them a little healthier as well. You can freehand the bunnies if you’ve got steadier hands than me, but I made a printable easter bunny template that you can use to trace them out.

Each bunny starts with a peanut cracker sandwich. I used Ritz with whole grains and Adams crunchy peanut butter since those are what we had in the house. I like that the Adams peanut butter doesn’t have sugar added, saving us a few grams of sugar in each treat.

The recipe makes 9 bunnies, but if you want more, just buy more candy melts, you should have plenty of peanut butter, crackers, and marshmallows. I use Ghiradelli candy melts in the video because I found them on sale, but usually I find Wilton candy melts to be cheaper.

Here’s a quick video that shows step by step how to make these cute little bunnies.

Please pay no mind to the fact that I had not washed my hair in a week when I shot the video. Larkin has been having tummy troubles and needing to be held or worn almost 24/7, so I am severely deprived in both sleep and personal hygiene at the moment. Hey that’s keeping it real right? I see plenty of other moms of little ones with equally disheveled appearances, so let’s just pretend it’s a trend!

Corban loved eating his bunny almost as much as he loved saying “Bunny Butt!” over and over and over again. He’s a toddler, and a boy. What did I expect? Especially since I was totally chanting it right along with him!

It can sometimes be hard to come up with healthy snacks for toddlers, and I make no claims that this is any such thing since one bunny has the same amount of sugar as a couple of Oreo cookies.

But when we have desserts, we eat them in the afternoon, right after making them, instead of saving them for after dinner. So most of the week we do healthy kids snacks, but once a week I make sure we make a treat snack that’s as fun to make as it is to eat. We all love those treat days!Peanut butter bunny butt Easter treat recipe EatingRichly.com

Peanut Butter Bunny Treat Recipe

A sweet and salty bunny treat that's as fun to make as it is to eat. Perfect for Easter dessert!

Prep Time 20 minutes
Cook Time 2 minutes
Total Time 22 minutes

Ingredients

  • 18 Ritz crackers with whole grains
  • 3 tablespoons Adams peanut butter
  • 12 oz bag white candy melts
  • 9 mini marshamallows

Instructions

  1. Spread nine crackers with peanut butter and top each with another cracker to make sandwiches. Pop them in the freezer while you prep the other ingredients.
  2. Melt the candy according to the package instructions and put half of the melted candy into a squeeze bottle.
  3. Place a piece of parchment paper over the bunny template (get the link to print it in the post above).
  4. Working one bunny at a time, use the squeeze bottle to trace and fill in the head of the bunny and a little bit of the body.
  5. Coat a cracker sandwich in candy melt and place it on the bunny body, then top it with a mini marshmallow tail.
  6. Repeat with the other bunnies and let set a few minutes until hard.

Notes

Approximate cost/serving: I find the candy melts cheapest at Walmart (about $2.50 usually) and get peanut butter in bulk at Costco. The total cost of these bunnies for me was about $3.50 so just 40 cents per treat.
Vegetarian: There's no meat in these, but the candy melts do contain dairy.
