An easy egg salad recipe means just a few ingredients and not too much chopping. To me, the key to this egg salad recipe is the grated onion, which imparts a quick onion flavor with out having to chop it finely enough to not get big chunks of onion in every bite.
I sometimes like chunky egg salad, I fill it with chunks of tomato, pickles, and olives. But this is a more classic egg salad with hints of flavor packed in from paprika, lemon juice, and parsley. The most important thing though, is that it’s light on the mayonnaise!
I used to get sandwiches at the bowling alley diner down the street from the theater I did shows at (yep, I did musical theater for about 10 years). I only ordered the egg salad sandwich once. I watched them chop a couple boiled eggs, and then dump not one, two, or even three, but FOUR giant scoops of mayo in the container. I gagged as the first bite mayonnaise with boiled egg sandwich slid down my throat. As I returned my sandwich to ask for a turkey one, I decided that I would go home that night and make not only a better one, but the BEST egg salad recipe!
I’ve made lots of variations, but this is the one I make for other people who may not be as adventurous as I am. I love adding strips of bacon on the sandwich because what goes better with eggs than bacon? What’s your favorite ingredient in egg salad?
Best Egg Salad Sandwich Recipeserves 2
3 hard boiled eggs
1 TBS mayonnaise
1 tsp mustard
1 tsp lemon juice
1 tsp parsley
dash of paprika
1 Roma tomato sliced
4 slices bacon
4 leaves of lettuce
Peel and chop the eggs. Mix well in a bowl with mayonnaise, mustard, lemon juice, and parsley.
Spread onto two slices of bread and sprinkle with a little paprika. Top each with half the tomato slices, two strips of bacon, and two leaves of lettuce.
Top each sandwich with another slice of bread and cut diagonally in half to serve.
Approximate cost/serving: Eggs are cheaper than lunch meat, so this is a really affordable sandwich. It only cost about $1.80 for two sandwiches, so 90 cents a serving.
Vegetarian/Gluten Free: If you’re going meatless, just skip the bacon. For gluten free simply use gluten free bread.
