Try this super easy, grab-and-go, healthy breakfast english muffin recipe. It will keep you energized through the morning. Feel free to sub your favorite nut or seed butter. You can also use vegan English muffins and sub coconut oil for the butter to make these dairy free and vegan.

Ingredients

  • 4 tbsp peanut butter
  • 2 english muffins, split, and toasted
  • 1 large red apple, cored and sliced
  • 2 tbsp maple syrup
  • 1 tbsp butter
  • 1/4 tsp cinnamon

Instructions

  1. Spread 1 heaping tablespoon peanut butter onto each toasted English muffin half.
  2. Top each one with a few apple slices.
  3. In the microwave, melt together butter, maple syrup, and cinnamon, stirring frequently until smooth.
  4. Drizzle the cinnamon mixture over the apple slices.
  5. Delicious!
