The shameful reality is, sometimes I’m so overwhelmed I just don’t do any of it. And then the cycle begins. You know the one. The crazy cycle of self-pity that none of the new year’s resolutions are sticking. So I might as well just eat that donut from the box the boss brought in…

- 4 tbsp peanut butter
- 2 english muffins, split, and toasted
- 1 large red apple, cored and sliced
- 2 tbsp maple syrup
- 1 tbsp butter
- 1/4 tsp cinnamon
- Spread 1 heaping tablespoon peanut butter onto each toasted English muffin half.
- Top each one with a few apple slices.
- In the microwave, melt together butter, maple syrup, and cinnamon, stirring frequently until smooth.
- Drizzle the cinnamon mixture over the apple slices.
