Pickled Cucumber snack


This snack cost me less than a dollar to make! I got 10 high fiber spinach tortillas for $2 because they were expiring soon. I also had a cucumber ($.50 from our nearby farmer market) that I sliced up and soaked in equal parts water and white vinegar in the fridge. They’re great on sandwiches. Finally a little bit of mayo, four slices of deli style turkey lunchmeat, and some baby spinach.


I spread the tortilla with a little mayo (I think I’ll try cream cheese next time), then arranged the lunchmeat and cucumbers. I only show the row of cucumbers down the middle, but you should actually make three rows or it will be too dry. Top with a layer of baby spinach and roll up. It’s delicious and cheap!
