Healthy Cute Valentine’s Breakfast Recipe

Whether you have a special someone, children who love cute food, or just want to treat yourself this Valentine’s Day, these muffins are the perfect breakfast treat.  I noticed that most of the Valentine’s Day breakfast recipes out there were typically sugary and full of empty carbohydrates.  These past few months, I’ve been thinking a lot about how cooking is truly an act of love.  I’ve pondered the reasons I cook for the people in my life, and realized that it’s to make them feel loved, bring them joy, and to comfort them.

My conclusion then is that if I really care about them, I should feed them with healthful food made with whole ingredients that will nourish their bodies.  But I also don’t want them to feel deprived, or even worse, think that healthy food is being forced upon them.  That’s where the idea for this adorable muffin recipe came from.  Beautiful chewy muffins made with whole wheat, cranberry applesauce and organic sucanat.  Full of flavor, health, and love.I’m always searching for Valentine’s Day recipes, and especially recipes for kids to use in cooking classes.  After making this batch of muffins, I decided to bring them to the house of some special friends we were visiting that evening.  They have three children ages 2, 4 and 6.

Pumpkin Pie Spice Flavored Sugar

I’m sure someone somewhere in the world has made pumpkin pie flavored sugar, but I haven’t seen it so I claim it as my own!  The sugar is mixed with ground cinnamon, nutmeg, cloves, ginger and allspice to give that signature holiday flavor.  You can use it in your holiday baking, or stir it into hot wine for a delicious holiday cocktail.  My absolute favorite way to use it though is in my pumpkin pie creme brulee.  You can see it peeking out of the top corner of the photo.  That recipe’s coming next, I promise!

Rustic Berry Hand Pies for the Pie Party

Today is the all new International holiday, Pie Party!  Okay it’s not actually an International holiday, it’s an idea dreamed up by some friends of mine on Twitter.  We all love pie, and want to help people get over their fear of making pie.  So it was decided that July 5 should be a Pie Party, where everyone posts a photo of a pie they’ve made.  I’ve been working on a rustic healthy pie recipe using fresh ground whole wheat and organic sucanat.  It took a few attempts, but I’ve finally created an easy pie recipe that is good for you, tasty, and looks good messy!

Healthy Strawberry Rhubarb Crisp Recipe

Our CSA is starting next week and I’m so excited.  I feel like a got a head start last week though, picking up produce from Mosby Farm who donates ingredients for the Healthy Cooking on a Tight Budget Program.  I LOVE Mosby and totally need to make a video about them sometime.  Not only do they donate all the produce ingredients I need for each class, they also donate large quantities of the produce they have an abundance of to raffle off to class participants.  Last week, we got lots of rhubarb to send participants home with, and Facebook was filled with their excited updates about making this lovely rhubarb crisp recipe over the weekend.Rhubarb is a plant with a long history.  The earliest records of rhubarb use date all the way back to ancient China when it was used for medicinal purposes.  One of the most unique qualities of rhubarb is that it is a vegetable that is used like a fruit, typically in pies and other rhubarb dessert recipes.
