This stuffed chicken recipe is easy to make and packed with Mediterranean flavors like artichokes, roasted red peppers, feta, green onions, and oregano. It’s keto-friendly too!

The filling only takes about 10 minutes to make. And if you chop the filling ingredients fine enough, your kids won’t even know there are vegetables in the chicken. They’ll just taste cheesy, chickeny, goodness.

First we headed to the meat section of our local grocery store. I was excited to see that they had the Foster Farms No Antibiotics chicken breast fillets on sale.

Next, Eric pulled out his phone to scan the QR code on the label. It’s that funny looking square right next to the picture of DORI™. 

With new iOS 11 and Android updates scanning QR codes is easier than ever. You don’t even have to download an app! Just open the camera on your iPhone or Android device and scan. This is super handy in the store because  DORI™ has coupons you can use to save even more!

Once you scan the code, it takes you straight to DORI™! That’s access to coupons for Foster Farms chicken, along with hundreds of recipes and other great info. I was able to save my coupon, and pick our Mediterranean-stuffed chicken dinner recipe right there in the store.

Once I got home with all my ingredients (and a great deal on Foster Farms chicken!), I was ready to make dinner.

HOW TO MAKE MEDITERRANEAN-STUFFED CHICKEN BREASTS

Start by gathering your ingredients. You’ll need Foster Farms Boneless Skinless Breast Fillets, feta cheese, marinated artichoke hearts, roasted red peppers, green onions, oregano (fresh or dried), and salt and pepper.

Mix the artichoke hearts, feta, red peppers, green onions, and oregano together to make your stuffed chicken filling.

Now you need to cut a pocket into each chicken breast. Use a sharp knife and start at the side of the thickest part of the breast. Slice into it but not all the way through.

How to make Keto Stuffed Chicken

Now you can fill each chicken breast with 1/4 of the Mediterranean filling.

This keto stuffed chicken is easy to make and packed with Mediterranean flavors like artichokes, roasted red peppers, feta, green onions, and oregano.

Next use toothpicks to close up the pocket, making sure all the filling is securely inside.

Sprinkle each stuffed chicken breast all over with salt and pepper. Then grill on an outdoor grill, or in a grill pan on the stove. Always make sure to use a meat thermometer and cook until the thickest part of the chicken is 165 degrees F.

For a complete meal I like to serve the stuffed chicken breasts with a Greek salad or some of my garlic Parmesan broccoli on the side.

Keto Stuffed Chicken Recipe

Ingredients

  • 4 Foster Farms Boneless Skinless Chicken Breast Fillets
  • 1/4 cup crumbled feta cheese
  • 1/4 cup finely chopped, drained marinated artichoke hearts
  • 2 tablespoons finely chopped, drained roasted red peppers
  • 2 tablespoons thinly sliced green onion
  • 2 teaspoons snipped fresh oregano, or 1/2 teaspoon dried oregano
  • 1 teaspoon kosher salt
  • 1/4 teaspoon ground black pepper

Instructions

  1. Use a sharp knife to cut a pocket in each chicken breast,horizontally through the thickest portion to, but not through, the opposite side. How to make Keto Stuffed Chicken
  2. In a small bowl, combine feta, artichoke hearts, roasted peppers, green onion and oregano. Filling for Mediterranean Keto Stuffed Chicken
  3. Spoon filling evenly into pockets in chicken breasts. This keto stuffed chicken is easy to make and packed with Mediterranean flavors like artichokes, roasted red peppers, feta, green onions, and oregano.
  4. Secure opening of the chicken breasts with wooden toothpicks. Sealing stuffed chicken breast with toothpicks
  5. Sprinkle chicken breasts all over with salt and black pepper.
  6. Preheat a large nonstick skillet or grill pan on medium, and coat with cooking spray.
  7. Add chicken and cook 10-12 minutes on each side, until internal temperature measures at least 165 degrees F. Mediterranean Keto Stuffed Chicken Breast Grilled

Notes

If you find the chicken is not cooking through in the skillet or grill pan, you can finish it off in a 350 degree F oven. Sometimes thicker chicken breasts have a hard time cooking through on the stove.

CHARCOAL GRILL: Place stuffed chicken breasts on the rack of a charcoal grill directly over medium coals. Grill uncovered for 6-8 minutes on each side, or until chicken temperature is at least 165 degrees F.

GAS GRILL: Preheat grill to medium. Place chicken on the grill rack over the heat. Cover and grill 6-8 minutes on each side, or until it reaches at least 165 degrees F.

  3. I do love both dark and white meat. I think they both have their place as long as you use them correctly. Chicken breast is perfect for stuffing and this looks so delicious. I usually do mine with pesto but I’m going to try this next.
